1 pound dried pinto beans, rinsed and sorted
2 tablespoons canola oil
1 small onion, diced
4 cloves garlic, minced
1 14-ounce can crushed tomatoes
2 tablespoons tomato paste
1 teaspoon brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon smoked paprika
Salt and pepper to taste
6 cups chicken or vegetable broth

Soak the beans: Rinse and sort the dried pinto beans, then soak them overnight or for at least 8 hours in water. An alternative quick soak method is also available.

Sauté aromatics: Drain the soaked beans. Heat oil in a large pot or Dutch oven and sauté diced onion until softened, then add minced garlic and cook until fragrant.
Seasonings: Add crushed tomatoes, tomato paste, brown sugar, and spices (chili powder, cumin, oregano, smoked paprika, salt, and pepper) to the pot and cook, stirring frequently.

Cook the beans: Add the drained beans and stir, then pour in the broth and bring to a boil.Simmer and thicken: Reduce heat, cover, and simmer, stirring occasionally, until the beans are tender. Add boiling water if they become too dry.

Adjust and serve: Adjust thickness and seasoning as needed. Serve hot, optionally with toppings or alongside rice or cornbread.
