4 C. Milk
1 C. Cream of Wheat ( Not instant)
1 C. Sugar
Dash salt
3 egg yolks
1 Oz. Lemon Extract
3 Eggs
Saltine crackers-crushed

Directions:
Directions:
Heat milk
Add sugar and salt over medium low heat until hot.
Stir in Cream of Wheat, stirring constantly to avoid lumps.
Cook until the mixture starts to thicken.
Remove from heat.
Beat 3 egg yolks and add a small amount of of hot mixture to temper eggs.
Add mixture back to pot stirring to fully incorporate.
Return to heat and continue to cook for 5 minutes. Stirring constantly until thick.
Remove from heat and stir in lemon extract.
Pour onto platter or large plate and refrigerate over night.

When ready to cook cut polenta dussa into squares or diamonds.
Beat 3 eggs.
Dip pieces in egg then coat with cracker crumbs.
Fry in melted Crisco or oil.
