2 cups flour
1 teaspoon baking powder
½ teaspoon salt
3 tablespoons butter (melted)
1 tablespoon sugar
1 pk of dry yeast
¾ to 1 cup warm water

After cooking sopapillas:
sugar & cinnamon mixture
honey

Directions:
Directions:
In a medium bowl, mix together flour, baking powder, salt, and sugar. Empty the package of dry yeast into the warm water along with the melted butter. Add that to the flour mixture. Then mix the dough until it is smooth. Cover the bowl with a towel for 20 minutes.

Turn dough out onto a clean surface and us a rolling pin to roll into ¼ inch thickness. Use a knife or pizza roller to cut into 3 inch squares.

Heat 4 inches of oil in a sturdy pot over medium-high heat, until temperature reaches 375 degrees. Add sopapillas, one at a time, and fry until puffy and golden brown, about 15 seconds per side. Remove from pot and transfer to a paper-towel lined bowl. Immediately, while they are hot, roll them in another bowl or pan that has a sugar and cinnamon mixture.

These are to be served drizzled with honey.

A traditional Mexican dessert. They’re so good dusted with cinnamon sugar and drizzled with honey.

Note from Janet: This is a recipe that I used with my grandchildren when they were to take a Mexican dish to school after taking a Spanish class in high school. I named it after my great-granddaughter, Sutton, because she has helped me several times make it for the family.
