Ingredients: 1 1/2 sticks cold butter 3 1/3 c all purpose flour plus extra for rolling 1 T baking powder 2 1/2 tsp. salt plus extra for sprinkling on top 1 1/4 c cold buttermilk or vegan buttermilk (see below) 1 egg
Preheat oven to 375. Shave cold butter on microplane and place in freezer for about 10 min. In large bowl mix flour, baking powder, and salt. Add frozen butter and mix well. Add buttermilk in two stages mixing lightly with a fork after each addition. Do not over mix! Dump mixture onto a floured pastry mat and bring together with hands or bench scraper into a thick rectangle. Pat down and roll with rolling pin, again into a thick rectangle, just enough to be able to fold over. Dough will be crumbly and still thick. Fold over once and pat down lightly. Roll with rolling pin and flatten slightly just enough to fold over. Do this 2-3 times until dough comes together and is smooth. Don’t add too much flour and don’t overwork dough! Cut the rectangle into 8 equal pieces with a large knife. Cut straight down. Place pieces on a silicone mat or parchment lined cookie sheet a few inches apart. Mix egg with a fork and brush top and all sides or the biscuits. Sprinkle with a little extra salt ( flaky sea salt is best). Bake 30-35 min until brown and crunchy!
You can easily make buttermilk from any type of plain milk and either lemon juice or vinegar. For this recipe, add 2 T vinegar to a 2 c measure and then fill with almond milk up to the 1 1/4 mark. Let sit for 10 min in fridge.
