Low Carb Tortillas

For the meat: we used;
1 lb ground lamb (or use ground beef),
3 tablespoons finely minced onion
2 cloves minced garlic
3 tablespoons minced mint
1 teaspoon coriander
1 teaspoon cumin
1 tablespoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon pepper
zest of 1 lemon

For the tzatziki:
1/2 large cucumber (grated),
2 cups full-fat Greek yogurt,
1 clove garlic, minced,
2 Tbsp finely chopped fresh mint,
juice of 1–2 lemons,
1 Tbsp olive oil,
1/2 tsp salt.

For the Gyro and toppings: 4 low carb tortillas, 1/2 cucumber (sliced), 1/4 red onion (sliced), and 1 tomato (sliced).
