1 cup diced cucumbers-no seeds
1 cup diced green pepper
1 cup corn (drained)
1 cup red onion diced
1 cup celery diced
1 cup diced plum tomatoes
Sea salt/black pepper to taste
Add mint or cilantro if wanted
1/2-1cup olive oil
2 Tabsp lemon juice
