6 green plantains, peeled and cut into thirds
4 Tbsp butter
6 oz queso fresco, crumbled
kosher salt
canola oil

Directions:
Directions:
Place the plantains in a large pot and cover with water.
Bring to a boil, then reduce heat to mediuam and cook unti soft, about 20 minutes.
Transfer to a large bowl, reserving the water.
Mash the plantains with the butter and season with salt.
Gradually add up to 1 1/2 cups of the reserved water, mashing to a sticky, puree-like consistency.
Shape the mixture into palm-sized patties, then make a dent in the center of each patty and fill with queso fresco.
Close the patties, covering the cheese completely.
Heat 2 Tbsp of oil in a large skillet.
Fry the patties in batches, adding more oil as needed, until golden brown with a hard crust on each side.
Place on a rimmed, parchment paper-lined baking sheet and bake at 350º until warmed through, about 10 minutes.
