3 cups flour
1 cup warm water
1 egg
1/2 tsp salt
1/4 cup canola oil
3 cups refried eans
1/2 cup Mexican crema
4 oz cotija cheese
1 - 2 splashes thin hot sauce

Directions:
Directions:
Combine the flour, water, egg, salt, and oil in a large bowl. Turn onto a lightly floured surface, then knead until completely mixed and not sticky.
Form into 16 balls, cover, and let rest for 20 minutes.
Streat or roll each ball into a 6 - 8-inch tortilla.
Heat a skillet over medium-high heat, coat with cooking spray, and cook each tortilla until browned on both sides, about 1 minute total.
Stack on a plate and cover to keep warm and soft.
Smear 2 Tbsp bean over each tortilla.
Add 1 Tbsp crema, 1/2 oz cheese, and a dash or two of hot sauce.
Fold over to serve.
