15 oz can Southwestern-flavored pinto beans
1 cup shredded Monterey Jack or pepper jack cheese
1 cup shredded and chopped rotisserie chicken
2 pkg frozen empanada shells, thawed
1 large egg

Directions:
Directions:
Combine the beans, cheese, and chicken.
Place a heaping tablespoonful of filling onto each empanada shell, then fold and crimp to seal.
Arrange the empanadas over parchment paper-lined baking sheets.
Whisk the egg with 2 Tbsp water, the brush the empanadas with the egg wash.
Bake at 400º for 15 - 20 minutes.
