6 medium russet potatoes, peeled and chopped
1–2 cups fresh spinach
1 cup milk
½ cup chopped green onions
Salt and pepper, to taste
Fresh parsley, for garnish

Directions:
Directions:
1.Prep Potatoes: Peel and chop the potatoes. Soak in cold water for 10 minutes.
2.Cook Potatoes: Drain the potatoes and place in a pot of fresh water. Boil until tender, about 15–20 minutes.
3.Prepare Spinach Mixture: While potatoes are cooking, combine spinach, milk, green onions, salt, and pepper in a small pan. Bring to a boil, then simmer for 30 seconds. Remove from heat.
4.Mash Potatoes: Drain the cooked potatoes and mash until smooth.
5.Combine: Stir in the spinach and milk mixture until well combined.
6.Serve: Sprinkle with fresh parsley and enjoy warm.
