Pork Marsala Recipe

Small pork tenderloin, silver skin removed
Seasoned flour (Kosher salt, pepper, garlic powder, paprika)
Butter, olive oil (about 3 T butter and reserve 1 T for later)
Mushrooms, whatever kind you like. I used one half box but the more the better.
Chicken broth, about 1/4 cup
Marsala, almost 3/4 cup
Parsley

Trim silver skin from pork, slice into about 3/4" rounds and smash down with palm of your hands until round and flattened a little.

Season in flour mixture.

In pan med/high heat, brown pork in olive oil butter combination. Brown on both sides and remove to plate.

Add remaining T butter, scrape bits from pan and add mushrooms, cook over medium heat until mushrooms are cooked down, about 10 minutes.

Add chicken broth and cook until slightly thickened.

Add pork back in and then add marsala. Simmer for about 15 minutes

You can start with less marsala but I think the taste of it combined with everything is a big plus in this recipe.

Chop parsley and garnish.

Serve over starch of your choice.

I love this over mashed potatoes but it would be great over pasta. As with all my cooking, I don't have exact measurements. I taste and adjust along the way.
