1/2 medium head of red cabbage, diced
1 tablespoon vegetable oil
1/2 cup onion, chopped
1 medium tart, apples, quartered
3 tablespoons tarragon or red wine vinegar
1 tablespoon sugar
1 bay leaf
1 teaspoon salt, optional
1/4 teaspoon pepper
1/8 teaspoon ground clove

Directions:
Directions:
Place cabbage in a large kettle of boiling salted water, boil for one minute. Drain. Return to kettle, stir in remaining ingredients. Cover and simmer for one hour or until cabbage is tender. Remove Bayleaf.
