6 medium potatoes (yellow fleshed are great) boiled and diced
while hot
½ cup chopped onion
1 500-ml container, or a little bit more if potatoes absorb a lot
1 tsp salt and ¼ tsp pepper
Paprika, dill or parsley for garnish as desired

Directions:
Directions:
Boil potatoes with skins on. Peel and cube while hot. Place in
a large bowl. Combine onion, sour cream and salt and pepper
and mix in thoroughly. Allow to stand at least one hour at
room temperature.
Spread in an oven-proof shallow casserole. At this point you
can refrigerate it, then either microwave it before serving, or
you can also broil it for 10 or minutes if serving shortly after
assembling, or you can do both methods but with a shorter
time under the broiler. Watch the top doesn’t brown too
much.
