1 pound butter, softened
1⅔ cup light brown sugar
¾ cup +3 Tbsp white sugar
3 eggs
½ Tbsp. vanilla extract
2 cups all-purpose flour
½ Tbsp. + 1 tsp. baking soda
⅓ tsp. salt
5¾ cup oats

Filling:
11 Tbsp. softened butter
11 oz. cream cheese (softened)
4 cups powdered sugar
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350º. Cream butter and both sugars until smooth, light and fluffy.
Add eggs one at a time. Scrape down sides of bowl each time. Add vanilla and mix well. Add flour baking soda and salt. Mix well. Add to mixer and mix until well combined. Scrape down sides. Fold in oats. Mixture will be stiff.
Scoop cookie dough into uniform balls. Press down slightly onto cookie sheet. Bake for 8 - 12 minutes. Remove to wire rack and cool completely.

To make filling:
Cream butter and cream cheese together until light and fluffy. Add powdered sugar in stages, scraping down sides of bowl in between additions. Add vanilla and mix to combine.

To assemble:
Add a dollop of icing on the flat side of a cookie. Smooth out slightly with the back of a spoon. Top with additional cookie. Press down gently so icing spreads out to sides of the cookie.
Store in air tight container.
