2 chicken breasts, split, skinned, and boned
2 eggs slightly beaten
1 tsp salt
1/8 tsp pepper
1 c. dry bread crumbs
1/2 c. olive oil or veg oil
2 8oz cans tomato sauce
1/4 tsp leaf basil
1/8 tsp garlic powder
1/2 c. parmesan cheese
1 ( 8oz) pkg. Mozzarella cheese

Pound chicken breasts until about 1/4 inch thick, Combine eggs, salt and pepper. Dip chicken breasts in egg mixture, then in bread crumbs. In hot oil brown chicken breast on both sides, remove to shallow casserole. Stir tomato sauce, basil (crumbled) and garlic powder into pan; bring to boiling; simmer 10 min. or until thickened. Pour over chicken breasts; sprinkle with Parmesan; cover. Bake at 350 for 30 minutes. Uncover. Place sliced Mozzarella cheese over chicken breasts; bake 10 minutes longer
