2/3 c. Carrots, finely chopped
1/4 c. Pearled barley
1 c. Water

2 celery ribs- large chunks
1 onion, chopped-large chunks
1/2 c. Water, divided

Pinch of stevia
1 c. Refried beans
1 1/2 qt. Tomato juice, divided
1 T. Salt
1 T. Paprika
1/2 lb. Ground beef, fried or chicken

Directions:
Directions:
Simmer carrots, barley and 1 c. Water for 20 minutes until barley is puffed and tender. Remove from heat and drain water.

Cook celery & onion into large chunks and cook in another pot.
Remove from heat and drain. Place in blender with 2 c. Tomato juice. Blend on high speed until celery & onion are smooth.

Combine veggies & barley, remaining tomato juice, and all other ingredients. Simmer until ready to serve.
