2 ripe avocados
1 head romaine lettuce, washed and thoroughly drained

Dressing:

1 tbsp. red wine
1 tbsp. vinegar
2/3 c. olive oil
1/2 tsp fresh lemon juice
1 clove garlic, minced
1 tsp. salt
1/2 tsp. white pepper
1/2 tsp. oregano (dry, but fresh can be used)
1/4 tsp. thyme (dry, but fresh can be used)

Directions:
Directions:
Prepare the dressing first and refrigerate. When ready to serve, scoop balls out of the avocados with a melon scoop and serve over whole romaine leaves. Drizzle with dressing.
*Variation can be to slice avocados and serve on a long platter. Drizzle with dressing.
*Offer extra dressing on the side for individual tastes.
