1 frozen pie shell
4 tomatoes peeled and sliced
1 medium sweet onion thinly sliced
10 basil leaves
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar
1 cup mayonnaise

Directions:
Directions:
Slice tomatoes and layer in a colander in a single layer. Sprinkle with salt and let them sit for about ten minutes to draw out extra water.
Prepare your pie shell according to the directions on the package.
Mix your cheeses with your mayonnaise. I do not use the preshredded cheese as it does not melt as well as fresh shredded cheese.
Begin layering your ingredients in your pie shell beginning with a thin layer of cheese mixture. Alternate cheese layer, tomato, onion, basil and top with a cheese layer.
Bake at 350 degrees for about 30 minutes. Let it cool before slicing and enjoy!
