There's nothing quite like a really good enchilada. Unfortunately, they're rather time-consuming to make. This recipe takes alot of that away, making them a fast, easy dinner. Best of all, the quantity can be easily adjusted.

1 box (dozen) frozen taquitos (beef, pork, or bean)
1 can enchilada sauce
1 small carton of fresh pico de gallo
OR 1 cup chopped mix of fresh tomatoes, onion, bell pepper, and cilantro
OR 1 can Rotel diced tomatoes and chiles
8 oz bag of grated Mexican style cheese

Directions:

1. Place the taquitos in a square baking pan.
2. Cover with the enchilada sauce.
3. Spread the pico de gallo evenly over the taquitos.
4. Generously spread the grated cheese over the taquitos.
5. Bake at 350º until cheese is melted and light browned.

For Chicken and Cheese Enchiladas

Substitute Fritos Queso Blanco cheese dip in place of enchilada sauce.

My father was an excellent cook who loved cooking, particularly Mexican food. As he aged however, it got harder and harder to do what he loved. This recipe was his adaption to his limited strength. The title description is his: he called them fake enchiladas. There's nothing fake about the taste though.
