4 cups fresh basil firmly packed
1 Cup pine nuts, lightly toasted.
(Can substitute pecans)
5-6 cloves garlic
2 Cups olive oil ( approx)
1 Cup Grated Parmesean cheese
Salt to taste


1 pound peeled shrimp
1 Tablespoon sour cream
1 box Angel hair pasta

Directions:
Directions:
Pulse pine nuts and garlic in food processor until coarsely ground. Add basil. Slowly stream olive oil in until blended. Hand mix in parmesean cheese and salt to taste.

This makes enough for 3 to 4 recipes. You can freeze the remainder to use later. Can be made in advance.


Saute shrimp in olive oil until just pink. Remove from heat. Stir in 1/3 of pesto. Add one good tablespoon of sour cream. Serve over cooked angel hair pasta.
