12 oz. Rainbow Twirls, Stuffed Tortellini or Stuffed Ravioli cooked & drained

3/4 c Kalamata olives
3/4 c green olives
4 green onion- sliced
Rainbow bell peppers- chopped
2 T capers
1 1/2 t garlic- minced
1 1/2 t thyme
1 1/2 t oregano
1/4 c EVOO
1/8 c apple cider vinegar
juice & zest of 1 lemon
1 c diced fresh tomatoes
3 T Italian parsley- chopped
2 T basil- chopped
fresh mozzarella balls or Feta- crumbled
diced salami or pepperoni

Combine all & let sit several hours before serving

If using stuffed Tortellini or Ravioli make sure you don't overcook the filling out of the pasta.
Fold in gently to not break the filling out of the pasta
