3 diced onions
3 diced celery sticks
2 diced Bell Pepper
3 cloves garlic minced
2 diced jalapeños (optional)
2 sticks butter
1/4 cup flour
2-3n lbs crawfish
3 Tbsp Parsley (optional)
1 cup Half and Half
1 lb Velveeta divided
1 lb Fettuccini
grated parmesan

Directions:
Directions:
Saute vegetables in melted butter.
Add flour. Cover and cook for 15 minutes over low heat.
Cook noodles in pot.
Add crawfish and parsley.
Add Half and Half and half of velveeta. Salt and pepper to taste and cayenne if desired.
Add cooked noodles.
Grease dish and pour in mixture.
Grate rest of velveeta and put on top then top with parmesan.
Bake in 350º oven until cheese is melted.
