2 lb unpared medium potatoes
2 tablespoons salad oil
2 1/2 tablespoons cider vinegar
1 tablespoon chopped parsley
2 tablespoons finely chopped onion
3/4 cup diced celery
1 teaspoon salt (optional)
1/2 teaspoon (or more) dill seed (this spice seems to last forever)
3/4 cup mayonnaise

Directions:

1. Cook scrubbed potatoes in small amount of boiling water, covered, until just tender -about 35 minutes
2. Drain; let cool slightly.
3. Peel potatoes, dice
4. In large bowl, combine all ingredients.
5. Refrigerate, covered, until well chilled.
