1 lb carrots (about 2½ c)
1 med onion
2 c water
2 c lowfat chicken broth
1 tsp salt
½ tsp fennel seed
1 bunch fresh dill (about 2 tbs dry dill weed)

Directions:
Directions:
Peel carrots and slice into ½" coins. Peel and chop onion. In 2½ quart sauce pan, bring carrots, onion, water, chicken broth, salt and fennel seed to a boil. Lower heat and simmer 30 to 40 minutes till carrots are tender.

Rinse and chop dill. Add dill to cooked carrots. Puree in blender in two batches. Can serve warm or cold. Garnish with fresh dill.
