1 med/large onion, chopped (about 1.25 cups)
5 lg cloves garlic
2T olive oil
1T + 1t chili powder
1/2t cumin
1 (28oz) can crushed tomatoes (or rotel)
3qts chicken stock
1c whole kernel corn, cooked (or 1 can, drained)
1 can black beans, rinsed and drained
1 rotisserie chicken, meat removed (save the bones!)
16oz salsa
tortilla chips
avocado
shredded cheese

Directions:
Directions:
1. In a large pot, heat oil over medium heat and saute onion and garlic until transparent.

2. Stir in chili powder, cumin, salsa, tomatoes, and chicken stock.

3. Add chicken carcass and bones. (I usually wrap it in cheesecloth so it's easy to remove and less likely to leave small choking hazards in your soup!)

4. Cook on low simmer for 1-2 hours.

5. Remove all bones.

6. Add beans, corn, and desired amount of chicken meat.

7. Simmer 10 minutes.

8. Garnish with tortilla chips, avocado, and cheese.
