1/2c bottled italian dressing
4-5 medium potatoes, peeled and cubed
1c chopped celery
1/4c sliced green onion
4 hard cooked eggs, chopped
1t salt
1/2 mayonnaise, or to taste

Directions:
Directions:
1. Put the steamer basket in the pressure cooker pot. Add the water, potatoes, and the eggs. Lock lid in place, select High Pressure, 4 minutes cook time and press start.

2. When timer beeps, turn off pressure cooker and do a quick pressure release. When the pressure is released, carefully remove the lid. Remove the steamer basket from the pressure cooking pot. Put eggs into ice cold water to cool.

3. In a large bowl, pour italian dressing over warm potatoes; chill 2 hours or overnight. (I'm usually heavy handed with the dressing, but I start here)

4. Add celery, onion, eggs, and salt.

5. Add mayonnaise and mix carefully.

6. Chill 4 hours.
