1 lb. lean ground chicken 2 green onions, diced, whites and green parts 2 tbsp. shallot, diced 2 tsp. gresh garlic, minced 1 tbsp. chili powder 1 tsp. cumin 1/2 tsp. Mexican oregano 1/2 tsp. ground coriander 1/4 tsp. black pepper 1/4 ts. kosher salt 1/4 c. cilantro, rinsed and chopped
Chipotle Mayo Ingredients:
1 tbsp. chopped chipotles in adobo sauce 2 tbsp light mayonnaise Juice from 1/2 lime (about 1 tbsp.)
Other Items Needed:
2 pasilla peppers (often labeled in grocery stores as poblano peppers) Either works! Hamburger bus for serving Condiments/toppings for serving

Directions: |
Directions:Combine ground chicken and other burger ingredients in a large bowl. Lightly mix, using hands to combine. Pat out into 4 burger pattis. Please in freezer!
While patties sit in freezer, preheat grill or grill pan and roast the peppers for a few minutes, until charred on the outside. Place on a plate and cover with plastic wrap.
Grease grill (with a damp paper towel and oil, using tongs to grease the hot grill grates)
Grill patties until cooked through (165 degrees F).
While patties are grilling, mix together chipotles, lime juice and mayonnaise in a small bowl. Set Aside.
Carefully chop stems off of peppers and cut in half. Discard seeds from center and slice peppers up.
When burgers are finished cooking, serve on buns with sliced peppers, chipotle mayo and any other desired toppings. Enjoy!

As we work to adjust to a healthier lifestyle, this has become one of our favorite burgers! It is so flavorful, and delicious served with black beans!
You can save the unused chipotle peppers in adobo sauce for another time or two, by putting the unused portion into a sandwich bag and storing in the freezer! Then take out and use only what you need!
