Lamb Chops with Blue Cheese Recipe

Ingredients: 2 loin lamb chops, each 1.5 inch thick 1 oz. blue cheese (crumbles) 2 tsp. Worcestershire sauce
NOTE: 1 chop should be enough for one person, but serve two for larger appetites!

Directions:Heat broiler.
With a small sharp knife, trim fat from the chops. Make a deep slit in the fat side to form a pocket.
Use half of the blue cheese and poke into the 'pocket' of each chop and press to close.
Place chops on a broiler pan and sprinkle each with Worcestershire sauce, using 1/2 tsp. on each side.
Broil 7 minutes, then turn.
Sprinkle with remaining Worcestershire sauce and cook another 7 minutes OR until pink.

Notes: This was the entree I prepared for my hubby when we were first dating and he came over for a "romantic dinner for two"! I served these chops with herb-sauteed potatoes and sauteed zucchini! To this day, he will tell anyone that this was the meal that hooked him! (He didn't even like lamb before he tried these!)
