2 lb. shrimp (jumbo or colossal), washed, peeled and deveined
8-10 cloves garlic, minced
2 tbsp. butter
1/4 c. olive oil
2-4 chipotle peppers in adobo sauce, chopped
3-4 limes, juiced

Directions:
Directions:
Heat a large skillet over medium heat.
Add the olive oil and butter to the skillet, so butter melts into the oil.
Add the garlic to the skillet and stir over medium heat until fragrant.
Add shrimp and saute, turning as they become opaque, and stirring to heat through.
Add lime juice and give it all a stir. Remove from heat.

Serve over jasmine rice, farro or quinoa.

Mix it up! I like to serve this dish over farro, especially, and often over a bed of spinach or mixed greens. It is also great served over quinoa or jasmine rice, with the greens and sliced avocado on the side as a nice complement.

TIP: I use the needed chipotle peppers and put the reminder of the peppers and the adobo sauce into a sandwich bag and keep in the freezer. Later, I can take out what I need and again, keep the rest in the freezer, so I don't waste!
