1 3/4 cup flour
2 cups sugar
2/3 cup Valhrona unsweetened baking chocolate
2 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1 cup buttermilk, shaken
1/2 canola oil
2 extra large eggs, room temperature
1 tsp vanilla
1 cup freshly brewed hot coffee
Cream Cheese frosting: Chocolate frosting:
8 ounces cream cheese, room temp 2 Sticks butter, softened
4 ounces unsalted butter, room temp 1 Extra-large egg yolk, room temp
1 pound box powder sugar 1 tsp vanilla and 1 T instant coffee powder
1/2 T vanilla 1 3/4 cups sifted powder sugar

Directions:
Preheat oven to 350 degrees. Butter two 9 inch cake pans. Line pans with parchment paper, then butter and flour paper. Shake out excess flour.
Sift flour, cocoa, baking soda, baking powder and salt into bowl of stand mixer.
In another bowl, combine buttermilk, oil, eggs and vanilla. With mixer on slow, add wet ingredients to flour mixture. Slowly add the coffee and stir just to combine. Scrape bottom with rubber spatula. Pour equally into prepared pans. Bake for 35 - 37. Check for doneness . DO NOT OVER BAKE! Tester should come out clean but look moist. Cool in pans 30 minutes, then invert onto cooling rack. Cool completely. Frost with cream cheese frosting or chocolate. Serve with vanilla ice cream.
Frosting:
Whip cream cheese and butter until light and fluffy. Reduce speed to low and add powder sugar. Add vanilla. Mix on medium high speed until light and fluffy again.
Place one cake on plate with wax paper underneath on 3 sides. Frost top. Add the second cake.Very thinly frost the entire cake and place in freezer for 15 minutes. Remove from freezer and add remaining frosting. This will help cake look best with no cake crumbs. Otherwise, just frost the cake at first without freezer if you don’t care about some cake crumbs coming through frosting.
For chocolate frosting, just whip the butter and continue on.
