2 sticks unsalted butter, room temperature, more for pan
1 cup sour cream, room temperature
1 tsp baking soda
2 cups flour (preferably pre-sifted or sift yourself)
1/2 tsp sea salt
1 1/2 cups sugar
7 ounce tube almond paste, cut into small pieces
4 egg yolks, room temperature
1 tsp almond extract
Powder sugar for sifting over cake

Preheat oven to 350 degrees. Butter bottom of a 9 inch springform pan. Place a big piece of brown parchment paper over and push into pan to fill. Butter the paper. You may forgo the paper so long as you generously butter the pan itself, sides and bottom.
Mix together the sour cream and baking soda in small bowl. Sift flour and salt in another bowl.
In the bowl of a stand or electric mixer, cream butter and sugar until fluffy. Add almond paste a little at a time. At medium speed, beat for 8 minutes. Beat in egg yolks one at a time. Mix until incorporated. It may look curdled but don’t worry. Blend in almond extract and sour cream mixture. Reduce speed and slowly add flour mixture.
Pour into prepared pan and spread evenly. Bake for 1 hour. Remove from oven and let cool on wire rack. May look sunken but that’s normal. When cooled, remove pan sides. Sift powder sugar on top and serve like a slice of pie.
