8 ounces elbow macaroni
1/4 cup butter
3 T flour
1/8 tsp dry mustard
1/8 tsp salt
1/8 tsp pepper
2 cups milk (2 %)
8 ounces extra sharp cheddar, cubed or shredded

Directions:
Directions:
Bring a large pot of salted water to a boil and cook noodles according to package directions. Drain well. Meanwhile make sauce:
Melt butter and add flour. Mix well and stir for 1 minute. Gradually add in the milk. Cook until thickened. Add mustard, salt and pepper. Add diced cheese and stir to melt.
Place cooked noodles into a casserole dish. Top with sauce and mix. Bake in a 350 degree oven for 30 minutes.

NOTES
Leftover Mac and cheese freezes well.
Variation: substitute 4 ounces of gruyere cheese in place of half the cheddar. Top with thinly sliced tomatoes and then bread crumbs sprinkled on top.
