1/4 cup extra virgin olive oil
4 garlic cloves, minced
1/4-1/2 tsp crushed red pepper
Sea salt to taste
One 28 ounce can Italian Plum tomatoes or San Marzano
1/2 cup whipping cream
2 T vodka
1/4 cup chopped fresh parsley
1 lb penne pasta or 1 package good quality spinach and cheese ravioli
Fresh parmesan if desired

Directions:
Directions:
In a large skillet to hold all pasta, combine oil, garlic, red pepper and a pinch of salt, stirring to coat with the oil. Cook over medium heat until garlic turns golden, but does not brown, 2-3 minutes. Add tomatoes. Stir to blend and simmer, uncovered, until sauce thickens, about 15 minutes. Taste for seasoning.
Meanwhile, bring a large pot of water to a boil. Add 3 T salt. Add the penne. Cook according to package directions.
Add the pasta to the skillet with the sauce. Toss. Add the vodka, toss again, then add the cream and toss. Cover, reduce heat to low and let rest for 1-2 minutes to allow the pasta to absorb the sauce. Add the parsley and toss again. Serve in bowls. Pass parmesan if desired, but not necessary.
For ravioli: to cook, follow package directions. Then treat it the same as pasta above.
If adding cook Italian sausage links, top each penne dish with 1-2 sausages.
