1 large onion, finely chopped
1 T extra virgin olive oil
12 ounces of best quality sweet Italian sausage
1 28 ounce can whole tomatoes, drained and chopped
2 T tomato paste
1/2 cup dry white wine
2 cloves garlic, minced
2/3 cup finely chopped green pepper
1 pound box Penne pasta
1/2 cup minced fresh parsley
Freshly grated parmesan

Directions:
Directions:
Heat oil in large skillet and cook onion until soft. Add sausage, cook until no longer pink. Stir in tomatoes, tomato paste, wine, garlic, salt and pepper. Bring to a boil then reduce heat and simmer, stirring occasionally for 15 minutes. Stir in green pepper and parsley. Simmer 5 minutes more.

While sauce is simmering, cook penne in large pot of boiling salted water following pasta directions. Drain and transfer to a serving bowl. Toss with the sauce and sprinkle with plenty of parmesan.
