One-Pan Roasted Halibut Recipe

1 pint cherry tomatoes, halved
1//2 cup thinly sliced shallots
2 tsp minced garlic
2 T extra virgin olive oil
1 T sherry or red wine vinegar
1 tsp honey
1 tsp kosher salt
1/2 tsp pepper
4 6-ounce pieces halibut
1 tsp finely grated lemon zest
Big handful of finely chopped basil and mint

Directions:

Preheat oven to 400.
Place the tomatoes, shallots and garlic in a 9x13 glass dish. In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper. Pour over the tomatoes and toss to combine. Roast until tomatoes have collapsed about 15 minutes.
While the tomatoes roast, pat fish dry, brush all over with olive oil, and season generously with salt and pepper.
Toss the tomatoes and move them to the sides of the dish. Place the fish fillets, evenly spaced, in the center. Roast fish until cooked through about 10-12 minutes.
Sprinkle the entire dish with the lemon zest, basil and mint. Serve the fish topped with some tomatoes, including juices.
