2 Petite fillets, same size and thickness if possible (more if serving 3 or more people)
Jacobson's steak seasoning
Onion powder season
Salt and pepper
Melted butter

Directions:
Directions:
Preheat oven to 410 degrees
Remove fillets from refrigerator 1 hour before cooking. Season both sides with steak seasoning, onion powder, salt and pepper
Place a cast iron sauté pan on a burner at high heat. Heat pan well. Place the fillets in the pan and set the time for 4 minutes for medium rare. Be sure to use the fan.
When the timer goes off, turn off the heat and quickly turn the fillets over. With oven gloves on, immediately place the hot sauté pan in the oven for 6 minutes.
Remove from oven and place the fillets on a dish. Pour a little melted butter over the top of each fillet and cover plate with foil. Allow to sit for at least 5 minutes.

Note: if you like medium, you can adjust the burner cook time, not the oven time. For medium, you could cook fillets for 4 1/2 minutes. It may take practice.
Do not over cook!
