1 Cookie Crust Pie Shell (9-inch) or big enough to cover pie plate
6 cups fresh medium-size strawberries
1 cup water
3/4 cup sugar
3 tablespoons cornstarch
Red food coloring


(Adjust recipe according to the size of the pie plate.)

Directions:
Wash berries; remove hulls. Crush 1 cup smaller berries and cook with the water
for about 2 minutes, reserve, add water if needed to make 1 1/4 cups juice. In
sauce-pan, combine sugar and cornstarch; stir in berry juice. Cook and stir over medium heat until thicken and clear. Stir in a small amount of the glaze mixture
(about 1/4 cup) on bottom and sides of baked pie shell. Cut berries in half and place flat side down in pie shell. Spoon half of the glaze carefully over berries, being sure each is well covered. Arrange remaining berries, flat size down, on first layer, spoon on remaining glaze, coating each berry. Chill 3 to 4 hours. Garnish with whipped cream.
