1 one pound of ground beef or pork
4 medium zucchinis (cut in halves)
1 onion
1 clove garlic
1 T crushed red pepper
Grated cheese
1 egg beaten
1 - 2 cups of tomato sauce or leftover spaghetti sauce

Directions:
Directions:
ºSauté the beef, pork or Italian sausage, set aside. Cut zucchini in 1/2 & scoop out the inside that you will puree and add in later. Cook the onions, crushed red pepper and garlic until soft then add the zucchini pulp and the meat along with 1 beaten egg, parsley & grated cheese.
Stuff the zucchini halves with the mixture.
Pour sauce into a 9 x13 pan & place zucchini on top
Cover with foil and bake 400º 30-35 minutes
