Ingredients:  
1 large shallot
2 T plus1 tsp aged sherry vinegar
1 T warm water
1 cup extra virgin olive oil
1 1/2 tsp Dijon mustard
1 1/2 tsp whole grain mustard
1 1/2 tsp honey
2 springs fresh thyme, stripped
1 large garlic clove, peeled and grated
Salt and fresh pepper

Finely chop shallot. Add to shaker. Add rest of ingredients and shake well. Keep in refrigerator when not in use. Remove from refrigerator and let come to room temp or micro wave for a few seconds to loosen up olive oil.
