Greens
1 ripe Bartlet pear, thinly sliced
1/4 cup walnuts, toasted and chopped
Blue or gorgonzola cheese, crumbled (best quality)

Dressing:
2 T sherry vinegar
1 small shallot, finely chopped
1/4 tsp salt
Fresh pepper
2 T extra virgin olive oil
2 T walnut oil

Directions:
Directions:
Combine dressing and shake well.

Compose salad and top with desired amount of dressing.
