Directions:Cook soba noodles according to package directions. Run the noodles under cold water to bring them down to room temperature. Drizzle and toss with 1/2 T sesame oil to prevent sticking. Poor noodles into a big bowl. In another bowl, combine 1 T of the sesame oil, soy sauce, rice vinegar, extra virgin olive oil, sugar, garlic and red pepper flakes. Whisk to combine. Set aside. Toss the noodles with the chicken, spring mix , cabbage, carrots, and bell peppers. Drizzle salad with enough dressing to taste and toss until evenly well coated. Garnish with a handful of peanuts and serve cold or room temperature. Salad will keep for up to 2 days.
The dressing is wonderful - make a double batch and store rest in refrigerator to use again. Dressing is also good over rice and meat as a marinade. |
