Chicken Soba Noodle Salad Recipe

1 package soba noodles
1 1/2 T sesame oil, divided
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup extra virgin olive oil
1/2 to 1 tsp red pepper flakes (depending on how spicy you want it)
2 cups shredded rotisserie chicken or par boil or bake 2 chicken breasts, cool and shred.
1 1/2 cups spring mix lettuce
1 cup red cabbage, thinly sliced
1 cup shredded carrots
2 red bell peppers, stemmed, seeded, thinly sliced
2 yellow bell peppers, stemmed, seeded, thinly sliced

Cook soba noodles according to package directions. Run the noodles under cold water to bring them down to room temperature. Drizzle and toss with 1/2 T sesame oil to prevent sticking. Poor noodles into a big bowl.
In another bowl, combine 1 T of the sesame oil, soy sauce, rice vinegar, extra virgin olive oil, sugar, garlic and red pepper flakes. Whisk to combine. Set aside.
Toss the noodles with the chicken, spring mix , cabbage, carrots, and bell peppers.
Drizzle salad with enough dressing to taste and toss until evenly well coated. Garnish with a handful of peanuts and serve cold or room temperature. Salad will keep for up to 2 days.

The dressing is wonderful - make a double batch and store rest in refrigerator to use again. Dressing is also good over rice and meat as a marinade.
