2 large garlic cloves, chopped
3 T soy sauce
1 1/2 T rice wine vinegar
1/4 cup toasted sesame oil
1/2 tsp dried red pepper flakes
1 tsp sugar
1/2 cup salted roasted cashews
1/3 cup water
1 pound thin spaghetti
1 1/2 cups loosely packed fresh coriander sprigs, washed well, spun dry and chopped fine.
Additional chopped coriander and chopped cashews for garnish.

Directions:

Blend together until smooth first 8 ingredients. Add in salt and pepper to taste and blend again. Sauce may be made up to 3 days ahead and chilled, covered. Bring to room temperature and stir before using.
Just before serving, cook spaghetti in salted water until al dente. Drain in a colander and rinse well under cold water. Drain again. Place in bowl and toss with sauce and chopped coriander. Top with remaining coriander and chopped cashews. Serve immediately.
