1 lb ground Italian sausage
Pinch of ground red pepper or crushed red pepper flakes (optional)
1 large onion, diced
About half a pound of uncooked bacon, chopped into small pieces
3 T minced garlic
10 C water
5 chicken bouillon cubes or 5 tsp granules
1 C heavy cream or 1 can evaporated milk
3-4 large russet potatoes, unpeeled and cut into 1/4 inch thick half moon shaped
2-3 handfuls of chopped fresh kale (or however much you like)
Salt and pepper to taste

Directions:
1. Saute Italian sausage and red pepper in a large pot. Drain excess fat and place sausage onto separate plate covered with paper towel
2. In the same pot, saute bacon, onions and garlic over low-medium heat until the onions are soft
3. Add water and chicken bouillon to the pot and bring to a boil
4. Reduce heat to medium or med/high. Add the sliced potatoes and cook until soft
5. Add the cream or milk and cook until thoroughly heated
6. Stir in the sausage and kale
7. Add salt and pepper to taste
8. Let all heat through (doesn't take long) and serve. YUMMY!

If you really don't like kale or forget to buy some, you can substitute with parsley. You really do need something green to make it pretty though, so don't leave it out! :)
