4 cups chopped, seedless watermelon, cut into bite-sized chunks and chilled
1/4 cup thinly sliced red onion
2 tblsp chopped fresh cilantro
3 tblsp virgin olive oil, divided
1 tblsp plus 2 tsp fresh lime juice, divided
3/4 tsp salt, divided
2 tsp chili powder
1/2 tsp pepper, divided
4 (6-oz) 1-inch thick boneless pork loin chops

In a medium bowl, combine watermelon chunks, onion and cilantro. Drizzle with
1 tblsp olive oil and 1 tblsp lime juice. Sprinkle with 1/2 tesp salt and 1/4 tsp pepper; toss gently to coat.

Preheat grill to medium. In a small bowl, combine chili powder, 1/4 tsp salt and 1/4 tsp pepper. Whisk in 2 tblsp olive oil and 2 tsp lime juice. Brush both sides of pork chops with mixture.

Grill chops 7-9 minutes, turning once, until internal temperature is 145 degrees F.
Let chops rest 3-4 minutes Top chops with watermelon salad.
