1 cup cake flour
1-½ cups powdered sugar
12 egg whites
1-½ tsps. cream of tartar
¼ tsp. salt
1 cup granulated sugar
1-½ tsps. vanilla
½ tsp. almond extract

Creamy glaze
⅓ cup butter
2 cups powdered sugar
1½ tsps. vanilla
2-4 tbsps. hot water

Directions:
Directions:
1. Heat oven to 375º F
2. Stir together flour & powdered sugar; set aside.
3. Beat egg whites, cream of tartar & saltin large mixer bowl on medium speed until foamy.
4. Add granulated sugar, 2 tbsps at a time., beating on high speed until meringue holds stiff peaks.
5. Gently fold in vanilla & almond extracts.
6. Sprinkle flour/sugar mixture, ¼ cup at a time, over meringue, folding in gently just until flour/sugar mixture disappears.
7. Push batter into ungreased tube pan 10 x 4”.
8. Gently cut through batter with spatula to remove air bubbles.
9. Bake until top springs back when touched lightly with finger, 30-35 mins.
10. Invert pan on funnel, let hang until cake is completely cool.
10. Spread with glaze.

Glaze
1. Melt butter in saucepan.
2. Blend in sugar & vanilla.
3. Stir in water, 1 tbsp. at a time, until glaze is desired consistency.
