​2 lbs oxtail (or beef shank)

​•​1 eggplant, sliced

​•​1 banana blossom (or napa cabbage), sliced

​•​1 cup green beans

​•​1/2 cup natural peanut butter (unsweetened)

​•​1/4 cup toasted ground rice OR 1 tbsp cornstarch mixed with 2 tbsp water

​•​1 onion, chopped

​•​6 cups water or beef broth

​•​Sea salt to taste

​•​GF shrimp paste (for serving)

​1.​Boil the Oxtail

In a large stockpot, combine oxtail and water. Boil for 5 mins, skim off foam, then reduce heat and simmer until tender (approx. 1 hour).

​2.​Sauté the Aromatics

In a separate saucepan, sauté onions in oil until translucent. Add a ladle of oxtail broth, peanut butter, and mix to dissolve.

​3.​Create the Sauce

Stir in ground toasted rice or cornstarch slurry to thicken. Add the rest of the broth and mix well.

​4.​Build the Kare-Kare

Return beef and sauce to one pot. Add eggplant, banana blossom, and green beans. Simmer 10–15 mins until veggies are tender.

​5.​Serve Loucid-Style

Plate in a deep bowl, serve with jasmine rice or garlic cauliflower rice. Spoon on GF bagoong for that signature umami hit.

​•​For plant-based Kare-Kare, sub oxtail with tofu and mushrooms.

​•​Toast glutinous rice, then grind for traditional thickening. Or use arrowroot for GF simplicity.

​•​Let the sauce rest for 10 mins before serving to thicken naturally.
