- 1 Tbsp olive oil
- 1/2 onion, diced
- 1 lb ground beef (or turkey)
- 24 oz jar spaghetti sauce (e.g., Rao's)
- 3-6 bell peppers (3 halved or 6 whole), any color
- 1/2 cup uncooked rice (white or basmati)
- 1/2 cup water or beef broth
- 1/4 tsp salt (plus extra to taste)
- 1 1/3 cups grated Parmesan cheese
- Fresh parsley (optional garnish)

1. Prep & Preheat: Preheat oven to 375'F. Cut and core peppers. If halving, use 3; if stuffing whole, use 6.
2. Saute Veggies & Meat: Heat oil in skillet. Saute onion and diced pepper tops for ~3 minutes. Add ground meat and cook until browned.
3. Simmer Filling: Stir in half the sauce (~14 oz), uncooked rice, salt, and broth. Cover and simmer 15'18 minutes until rice is tender. Stir in 1 cup Parmesan and season to taste.
4. Stuff Peppers: Arrange peppers in a 9x13 dish. Fill with meat mixture. Top with remaining sauce (optional).
5. Bake & Cheese: Cover with foil and bake 40 minutes. Uncover, sprinkle remaining Parmesan, and bake 5 more minutes until golden.
6. Serve: Garnish with parsley and serve hot.
