10 medium peaches
6-8 small jalapenos, seeded and chopped
2 tablespoons lemon zest
4 tablespoons lemon juice
6 cups granulated sugar

Peel and pit the fresh peaches, finely chop. Deseed and finely chop the jalapenos.

In a large pot combine the peaches, jalapenos, lemon zest, and lemon juice. Heat over medium high heat, stirring frequently, and bring to a gentle boil.

Once the jam reaches a full boil, stir in the sugar. Keep stirring to dissolve the sugar completely, and keep the mixture at a full rolling boil. Cook for 15-20 minutes until thickened. Dip a metal spoon into the jam. If it coats the back of the spoon without dripping too quickly, your fam is read.

Spoon into sterile jars, leaving 1/4 inch headspace. Clean tops of jars, add lids and rings, and water bath can for 10 minutes for 1/2 pint jars 15 minutes for pints.
