1 medium fresh pineapple, peeled, cored, and diced
1 whole jalapeno, deseeded and chopped
1 1/2 cup sugar
3/4 cup apple cider vinegar
1 1/2 teaspoon red pepper flakes
1/2 teaspoon ground ginger

Directions:
Directions:
In a dutch oven combine the sugar, vinegar, red pepper flakes, and ground ginger. Stir to combine and bring to a boil over medium heat. Add the pineapple chunks to the boiling syrup. Reduce heat to low and continue to simmer for 10 minutes, stirring occasionally.

Remove from heat and let cool for about 30 minutes. Using a slotted spoon, transfer pineapple chunks to jars, then ladle hot syrup over pineapple. Store in refrigerator or water bath can to seal. Recipe yields approximately 3 half pint jars. Use as a topping for burgers, pizza, tacos, or serve over cream cheese.
