½ c. finely chopped Onion
½ Green Pepper, seeded and chopped
1 tbsp. Vegetable Oil
1 can (28 oz.) whole Tomatoes, undrained
⅔ c. uncooked long-grain Rice
1 c. shredded process American Cheese

Directions:
Directions:
Sautee onion and pepper in oil until tender.
Add tomatoes, breaking up with a spoon.
Add rice and mix well.
Bring to boiling.
Lower heat, cover and cook slowly about 30 minutes or until rice is cooked.
Stir in cheese until melted.
